Carrot Salad

The perfect side dish for a future dinner party or backyard BBQ!

Ingredients

  • 3 cups shredded carrots
  • 1 8.5 oz can crushed pineapple tidbits drained
  • ½ cup raisins (I soak minefor a couple hours in orange juice to make them plump and juicy)
  • ½ cup mayo (I use asoy-free vegan mayo by Hellman’s that tastes just like the real thing)

Instructions

  •  Mix it all together and refrigerate. Makes 6 servings.
