Blank Canvas Chicken Salad

I’m famous for my chicken salad. My sister is famous for her chicken
salad. My niece is famous for her chicken salad (she even does fundraisers for
her local school and animal shelter by selling it by the pound). I daresay that
the women in my family are the original Chicken
Salad Chicks. Making your own original chicken salad starts with this basic
recipe.

Ingredients

  • 8 boneless chicken breasts Organic pasture-raised is best—happy chickens really do taste better!
  • 2 cups mayonnaise
  • 1 cup pickle relish sweet or dill, your choice
  • 1 cup diced celery
  • salt and pepper to taste about 1 tbs salt and 2 tbs of pepper

Instructions

  • Salt & pepper chicken, spread in roasting pan, and bake at 400 degrees until done.
  • Remove from oven and let chicken rest on a cutting board
    until cool enough to handle, then cut into chunks and mix with other
    ingredients.
