Old-Fashioned Lemonade

I swore that I’d prune our lemon tree once it stopped producing for the winter, but it never did, so I never did, and now it’s full of little green baby lemons again. So, I picked all the old yellow ones, and now I’m in search of recipes for anything made with lots of lemons. (If you have any good ones, please share with me!) I found a fantastic old second-hand Hawaiian cookbook on the shelf at Natalie’s house. I’m going to try this recipe for lemonade when I get home, but maybe I’ll substitute honey for sugar:

In a one-quart jar with a tight lid, put 1.5 C sugar, one TBSP of grated lemon peel, and 1.5 C very hot water. Shake until sugar is dissolved, then add 1.5 C fresh lemon juice and refrigerate. Fill 12-oz glasses with ice, pour ¼ C lemon syrup over the ice, then top up with ¾ C cold water and stir. (This all seems unnecessarily complicated, but maybe adding the syrup to the ice gives it a different flavor than combining it all first? Hmmm. What do you think?)
