My mom used to make this all the time; it’s a familiar comfort food from my childhood. (She never told me what a healthy food it was!) It’s so easy to make. Here’s all you need:
- 4 or five medium-sized peeled apples cut into small chunks
- A bag of shredded carrots (Yes, you can buy them that way!)
- A heaping double-handful of raisins – I like to soak mine overnight in rum in the refrigerator 😉
Mix that all up in a bowl, then add something to keep the apples and carrots from turning brown. Most people use mayonnaise, but I’m allergic to eggs, so I use vegan mayo, or if I’m out of that, I mix white wine vinegar and honey to pour over and mix into the apple/carrot/raisin combo. Or, you can use vinegar and lemon juice.
That’s it! It’s so easy!
