Apple, Carrot, and Raisin Salad

My mom used to make this all the time; it’s a familiar comfort food from my childhood. (She never told me what a healthy food it was!) It’s so easy to make. Here’s all you need:

  • 4 or five medium-sized peeled apples cut into small chunks
  • A bag of shredded carrots (Yes, you can buy them that way!)
  • A heaping double-handful of raisins – I like to soak mine overnight in rum in the refrigerator 😉

Mix that all up in a bowl, then add something to keep the apples and carrots from turning brown. Most people use mayonnaise, but I’m allergic to eggs, so I use vegan mayo, or if I’m out of that, I mix white wine vinegar and honey to pour over and mix into the apple/carrot/raisin combo. Or, you can use vinegar and lemon juice.

That’s it! It’s so easy!

    • I know, Jo, I’d forgotten about the recipe too, until our apple tree started producing more apples than we could eat. And that’s with our horses and donkeys getting apple slices for treats every day! I could’ve made jelly, but that was more trouble than I wanted to go through. Next year, I’m sure that ever-growing tree will insist that someone around here learns how to make jelly. I can’t remember the specific type of apple it is, but I remember seeing them at Fresh Market for more than $3.00 each. They’re really firm and taste like a cross between and apple and a pear.
