Daike’s Chocolate Oatmeal Bars

  • 1 can sweetened coconut milk
  • 3 dark chocolate bars (60 – 85% pure chocolate)
  • Instant dry oatmeal
  • Optional: raisins, cranberries, coconut flakes, whatever floats your boat.

Heat chocolate and coconut milk together in a smallish saucepan on stovetop with very low heat. Stir until smooth.

In a large bowl, pour 4 cups of dry oats, combine well with the melted chocolate mixture. It should be the consistency of cookie dough. Add more oats if needed. Spread the mixture into a 9 x 12 glass container, cover and refrigerate for two hours.

Cut into the serving-sizes of your choice and enjoy!
