Let’s Eat It Before It Goes Bad Salad

Slice and dice any fruits and veggies you know you’re not going to eat this week despite all the lofty dreams of healthy eating you had while braving the grocery store aisles and buying enough food to last for the next two weeks. You’ll be surprised at the tasty goodness of any combination of languishing fruits and veggies once they’ve been doused with lemon juice, balsamic vinaigrette, and olive oil, then left to marinate in the fridge. Just about any combination will do! If it turns out that you’ve made more than you can possibly eat, call a friend and let them know that you’ll be leaving a container of fruit salad on their porch. Here’s an example of some fruits and veggies you can combine, but don’t rush out to buy these particular items; just use what you have on hand!

Ingredients

  • Strawberries
  • Watermelon
  • Papaya
  • Grapes
  • Avocado
  • Onion
  • Cucumber
  • Celery
  • Apple
  • Tomato
  • And just about anything else that’s sitting in your fruit bowl looking sad.

Instructions

  • Dice your selection of fruits and veggies into bite-size pieces. (Dice more pungentitems, like onions and peppers, into smaller pieces.)
  • Combine them all in a big bowl, squeeze the juice of one or two lemons over the fruit and veggie mixture, then add oil and balsamic vinegar as you would to any salad.
