Good Eats in Louisville, KY

While we were in Louisville, we found a great Mexican restaurant, where I ordered Pina Fajitas. They were amazing! I didn’t need anyone to tell me the recipe; it was easy to discern. Here it is for two people:

  • 1 whole pineapple, cut in half lengthwise and scooped out, with the edible center cut into bite-sized cubes and the core discarded.
  • 1 large bell pepper, cored, cleaned, and cut into strips.
  • 1 onion, sliced.
  • Proteins of choice: Fajita steak strips, chicken breast strips, shrimp, chorizo.
  • Fajita seasoning.
  • Splash of olive oil in a hot skillet

Stir-fry all the ingredients except the pineapple boats. Put them in a 350-degree oven on a baking sheet to warm while the other ingredients are cooking. When the stir-fry ingredients are ready, remove the pineapple boats from the oven and fill them with the stir-fry mixture.

Serve with the usual accompaniments: beans, rice, guacamole, shredded lettuce, sour cream, and/or cheese. Enjoy!
