Stoplight Veggie Salad
- 4 large tomatoes sliced
- 1 onion sliced
- 1 red bell pepper sliced into rings
- 1 yellow bell pepper sliced into rings
- 1 green bell pepper sliced into rings
- 5 tbsp vinegar
- 5 tbsp olive oil
- 1.5 tsp paprika
- 1 tsp dry mustard
- salt and pepper to taste
- Arrange veggies in a flat-bottom dish with the tri-colored bell peppers on top.
- Mix the other ingredients and pour over veggies.
- Cover and chill overnight.
